The project, which will operate under the name Saumon du Médoc, is a key part of Pure Salmon’s global expansion and will draw on the company’s operational experience from its sites in Japan. The authorization was officially granted on August 3, 2026, completing the regulatory and technical review for the site at the industrial port in Le Verdon-sur-Mer.
The environmental authorization follows the building permit granted in June 2026, the positive opinion of the public inquiry commission, and the favorable opinion issued by CODERST, the Departmental Council for the Environment and Health and Technological Risks, on July 2.

It completes a step-by-step process following the building permit and the favorable opinion issued by CODERST. AQUACULTURE FOR THE FUTURE
Saumon du Médoc will use recirculating aquaculture system technology to support controlled land-based salmon production without the use of antibiotics and with careful management of local natural resources. The French facility will benefit from operational experience gained at Pure Salmon’s facilities in Japan, which began operations in May 2026.
Beyond its environmental ambitions, Saumon du Médoc addresses several important regional and national priorities:
- Economic development: The creation of 250 jobs at Pointe du Médoc.
- Food sovereignty: Local production of the most widely consumed fish in France, reducing the country’s reliance on imports.
- Circular feed production: The exclusive use of fish-processing by-products in feed production, as the only source of marine ingredients of fish meal and fish oil instead of foraged fish.

LOCAL PRODUCTION, FROM FARM TO PROCESSING
Saumon du Médoc is a company registered and based in France. Launched in 2022, the Pure Salmon project aims to develop and operate an environmentally responsible aquaculture facility with an integrated processing plant in Le Verdon-sur-Mer in Gironde.
Pure Salmon will produce salmon whose entire life cycle takes place in France, while offering a solution to some of the current health and environmental challenges associated with sea-based salmon farming.
